Street Corn
Grilled street-style corn is a staple all over Mexico. You will often see the corn being grilled in its husks over fire--but you can achieve great results on a stovetop. This recipe offers options for each. In both versions, you cook the corn in its husks to develop that smoky and sweet flavor that goes so well with creamy mayo, sour cream and salty Cotija cheese, making it one of the most delicious street foods you can find.
Ingredients
- 4 ears corn, husks and silks intact
- 1/4 cup Mexican crema or sour cream
- 1/4 cup mayonnaise
- 1 tablespoon lime juice, plus lime
- wedges, for serving
- 2 ounces Cotija or Parmesan, grated
- Uncle Rock's Rub
Directions
- Soak corn with husk in water for a minimum of two hours. Prepare a grill for medium-high heat.
- Put the corn in their husks on the grill grate over direct heat. Cover the grill and cook, uncovering the grill and rotating the corn every 6 minutes or so, until the husks are evenly charred, about 24 minutes total.
- Meanwhile, combine the crema, mayonnaise, and lime juice in a medium bowl until smooth. Thin with 1 Tablespoon of water if needed. Cover and chill the crema mixture until ready to serve.
- Pull back the corn husks and silks, leaving the husks attached to the base of the cobs. Using a pastry brush or a butter knife, spread the crema mixture on the corn. Transfer the corn to a platter, sprinkle generously with the Cotija on all sides and season with Uncle Rock's Rub. Serve with reserved lime wedges for squeezing over the corn.

Ingredients
- 2lbs Russet (or Red) potatoes
- 2TBS Olive oil
- Uncle Rock’s Rub
Directions
- Pre-heat oven to 375 degrees
- Dice or wedge potatoes to your preferred thickness. I prefer ½” thick so you can still have a crunch on the outside and soft tender inside.
- Alternatively, you can oil fry the potatoes at 325 degrees for 8 – 10 minutes or air fry according to your fryer’s recommendations.
- Lightly sprinkle oil over the raw potatoes, spread a single layer on a baking sheet, and dust with Uncle Rock’s Rub.
- Bake for 20 minutes, flip with a spatula, and re-dust with Uncle Rock’s Rub. Put back in the oven for 20 minutes.
- Remove, re-dust, serve, and enjoy.

Ingredients
- 8oz Fresh Salmon
- 3TBS Butter
- Uncle Rock’s Rub
Directions
- Remove the skin from the fillet
- Melt the butter in a pan over medium high heat.
- Dust the top of the fillet with a generous amount of Uncle Rock's Rub.
- Place in the center of the pan top side down and sear for 3 minutes.
- Dust the other side of the fillet with Uncle Rock's Rub.
- Flip the fillet, reduce heat to medium and cook to desired temperature. Approx 4 -5 minutes.

Chicken Wings
When it comes to Game Day food, nothing can really compete with chicken wings (sorry nachos, you tried). Wings are crispy, coated in your favorite rubs and sauces and totally acceptable to eat with your hands. Plus, there are practically hundreds of ways to serve them. You can switch up the cooking method opting to bake instead of frying, make wings in the air fryer or throw them on the grill or smoker.
Ingredients- 2.5lbs Chicken Wings
- 2TBSP Oil
- Uncle Rock’s Rub
- Frank's (or your choice) Hot Sauce
- Butter
Directions
- Rinse and dry wings.
- Lightly coat with oil.
- Dust wings with Uncle Rock's Rub and place in the air fryer.
- Cook at 390 degrees for 15 minutes.
- Flip wings and re-dust.
- Cook for another 15 minutes then flip and re-dust.
- Cook for another 7 minutes.
- Remove, re-dust, serve, and enjoy.
Sauce Secrets
- You can serve then dry (with no sauce) or sauce at this point.
- Adding Franks Hot Sauce will give you a Hot wing. Mix the sauce with butter and it will cut the heat. 50/50 is a medium wing and more butter makes it mild.
